I was about to get some takeout for lunch, like one of the vegan bowls from Native Foods ... then I realized that everything I needed for a homemade bowl was already in my fridge.
This is brown rice topped with corn and salsa verde with big chunks of creamy avocado and chipotle beef-style seitan.

And now Native Foods is closed until the end of August :(.
I just bought the Native Foods cookbook! Haven't tried anything from it yet. This looks like such a simple and satisfying dish.
